1 cup methi (fenugreek seeds), slightly crushed

cup rai (mustard seeds), slightly crushed

? hardar (turmeric)

1 teaspoon hing (asafetida)


1 cup tel (oil)

3 cups marchu (cayenne pepper)



1.                   Blow out the husk from the crushed fenugreek seeds and mustard seeds. You should see coarse yellow powder.

2.                   Mix the fenugreek seeds, mustard seeds, turmeric & asafetida.

3.                   Heat oil in a large pot. When hot, add the spice mixture.

4.                   Finally, add the cayenne pepper, remove from heat and let cool.
