Vaghaarelaa Bhaat (Fried Rice)

 

4 tbl                  oil

½ teaspoon       rai (mustard seeds)

1                      suku marchu (whole dried pepper)

1/8 teaspoon     hing (asafetida)

 

½ teaspoon       jiru (cumin seeds)

 

1                      kaando (onion), finely chopped

1                      lilu marchu (green chili), chopped

 

2 cups              left-over cooked rice, warmed up

 

¼ teaspoon       hardar (turmeric)

½ teaspoon       marchu (cayenne pepper)

1 teaspoon        dhaanaa jiru

½ teaspoon       mithu (salt)

1 teaspoon        saaker (sugar)

some                kothmari (cilantro), trimmed, washed & coarsely chopped

 

1.       Heat oil, adding mustard seeds, whole dried pepper & asafotida.  When the seeds start crackling, add cumin seeds and wait for 10 seconds. 

2.       Add the onions & green chili and brown the onions.

3.       Add the rice, turmeric, cayenne pepper, dhaanaa jiru, salt and sugar. Reduce heat, mix well. Garnish with fresh coriander and serve with dahi (plain yogurt) as a quick snack.
