Barfi

 

4 oz                  ghee (clarified butter)

2 cups              maavo (ricotta cheese)

 

1 ½ cup            saaker (sugar)

½ teaspoon       elchi (cardamom powder)

as desired         kesar (saffron), mixed in one teaspoon of warm milk

 

3 cups              powdered milk

 

some                pistaa (pistachio slivers)

some                badaam (almond slivers)

 

1.       Melt the clarified butter and add the ricotta cheese, cooking for about 7 minutes on medium heat.

2.       Add sugar, cardamom & saffron. Stir for about 3 minutes.

3.       Mix in the milk powder and stir for about 5 minutes.

4.       Pour into a pan to a depth of about ½”. Sprinkle the pistachio & almonds on top.
