Dudhi-no Halvo

 

1 tablespoon      ghee (clarified butter)

4 cups              dudhi, an Indian squash, grated

2 to 3 cups        dudh (whole milk), or any combination of cream or half-and-half

¾ cup               sugar

½ teaspoon       cardamom

 

1.       Melt the clarified butter and add the squash & milk.

2.       Boil down the milk on medium heat.

3.       Add the sugar and boil down the newly released water.

4.       Add the cardamom, mix well and remove from heat.

5.       Nice warm or cooled.
