Jalebi

 

1 cup                sugar

3 cups              water

10 strands         saffron

 

1 cup                all purpose flour

1 teaspoon        dry yeast

some                warm water

 

1 teaspoon        yogurt

1 teaspoon        ghee

 

as needed         red and yellow food color

as needed         ghee or shortening for frying

 

1.                   Make ek-tar syrup using the sugar, water & saffron.

2.                   Mix flour & yeast.  Add the warm water (about 115F) and let it ferment for 1 hour.

3.                   Add the yogurt & ghee.  Mix a drop of the food color to the batter.

4.                   Heat ghee for frying.  Fill a bottle with a ¼” snout with the batter and squeeze onto the hot butter. Fry & drain. Soak in the syrup and drain.
