Baajraa ni Puri (Spicy Millet Puri)

 

2 cups              bajra flour

½ cup               whole wheat flour

 

6-8 cloves          garlic, grated

½ teaspoon       aadu (ginger), grated

5-6                    lila marchaa (green chilies), minced

 

1/8 teaspoon     hing (asafetida)

1/8 teaspoon     hardar (turmeric)

1 teaspoon        mithu (salt)

1 teaspoon        saaker (sugar)

½ teaspoon       black pepper, freshly ground

 

as needed         yogurt

as needed         oil for frying

 

1.                   Mix the baajra flour, wheat flour, garlic, green chilies, ginger, salt, turmeric, asafetida, sugar & black pepper.

2.                   Add just enough yogurt to roll into a soft dough

3.                   Break off the dough into ½” balls. Roll each ball in the palms of your hands and slightly flatten to a 1/8” thick puri

4.                   Heat the oil. 

5.                   Fry the puris in batches, cooking both sides till the sides turn a light pink.
