cups bajra flour

cup whole wheat flour

cloves garlic, grated

teaspoon aadu (ginger), grated

teaspoon hing (asafetida)

teaspoon hardar (turmeric)

teaspoon mithu (salt)

teaspoon saaker (sugar)

teaspoon black pepper, freshly
ground
as
needed yogurt
as
needed oil for frying

Mix the baajra flour, wheat flour, garlic, green chilies,
ginger, salt, turmeric, asafetida, sugar & black pepper.

Add just enough yogurt to roll into a soft dough

Break off the dough into ½” balls. Roll each ball in the
palms of your hands and slightly flatten to a 1/8” thick puri
4.
Heat the oil.
5.
Fry the puris in batches, cooking both sides till the sides
turn a light pink.
