Rotli-nu Shaak (Refried Rotli)

 

Also known as Vaghaareli Rotli, this is often made for breakfast using leftover rotli from the night before.

 

1 tablespoon      tel (oil)

½ teaspoon       rai (mustard seeds)

1                      suku marchu (whole, dried pepper)

1/8 teaspoon     hing (asafetida)

 

1 cup                dahi (plain yogurt)

½ cup               pani (water)

6                      rotli, torn to bite-size pieces

½ teaspoon       marchu (cayenne pepper)

¼ teaspoon       hardar (turmeric)

1 teaspoon        dhaanaa jiru (powdered coriander & cumin seeds)

½ teaspoon       mithu (salt)

1 teaspoon        saaker (sugar)

 

1.                   Heat oil, add mustard seeds, whole dried pepper and asafetida.  Wait till the seeds start popping.

2.                   Mix yogurt and water.  Add to the oil.  Mix well and wait till the mixture starts boiling. Lower the heat.

3.                   Add the rotli pieces, along with cayenne pepper, turmeric, coriander-cumin, salt & sugar. Let it all simmer for 5 minutes.

4.                   Serve with yogurt & a steaming cup of tea for breakfast.
