tablespoon adad daal (urad dal)

leaves mitho limdo (curry

tablespoon aadu marchaa (minced
ginger root & green chili)

medium kaandaa (onions), sliced

batekaa (potatoes),
boiled and diced

½ teaspoon mithu (salt)

teaspoon hardar (turmeric)

Heat oil in a non-stick pan on high heat, adding urad dal
& curry leaves

When the urad dal turns pink, add the ginger & green
chilies. Stir briefly, then add the onions.

Fry until the onions get soft, then add the potatoes, salt
& turmeric. Mix well, add a little water, cover and cook on low heat until
the potatoes begin to fall apart.
