Dosaa-no Masaalo (Stuffing for Masala Dosa)

 

 

6 tablespoon      tel (oil)

 

2 tablespoon      adad daal (urad dal)

4 leaves            mitho limdo (curry leaves)

 

2 tablespoon      aadu marchaa (minced ginger root & green chili)

1 medium          kaandaa (onions), sliced long

 

6                      batekaa (potatoes), boiled and diced

1 ½ teaspoon    mithu (salt)

½ teaspoon       hardar (turmeric)

¼ cup               water

 

1.       Heat oil in a non-stick pan on high heat, adding urad dal & curry leaves

2.       When the urad dal turns pink, add the ginger & green chilies. Stir briefly, then add the onions.

3.       Fry until the onions get soft, then add the potatoes, salt & turmeric. Mix well, add a little water, cover and cook on low heat until the potatoes begin to fall apart.
