Vaghaarela Bhindaa (Fried Okra)

 

6 tablespoon      tel (oil)

1                      suku marchu (whole, dried pepper)

½ teaspoon       methi (fenugreek) seeds

1/8 teaspoon     hing (asafetida)

 

20                     okras, washed, pat-dried, ends trimmed & cut to ¼” thick slices

½ teaspoon       mithu (salt)

¼ teaspoon       hardar (turmeric)

 

½ teaspoon       marchu (cayenne pepper)

1 teaspoon        dhaanaa jiru (powdered coriander & cumin seeds)

 

1                     Heat oil with whole dried pepper, fenugreek seeds & asafetida.  Wait till the seeds start crackling.

2                     Add okra, salt and turmeric.  Mix well and lower heat.  Cook for 20 minutes.

3                     Add cayenne pepper and coriander-cumin.  Mix well and cook for 2 more minutes.

4                     Serve with fresh rotli & plain yogurt.
