(Fried Okra)

tablespoon tel (oil)

suku marchu (whole,
dried pepper)
½ teaspoon methi (fenugreek) seeds
1/8 teaspoon hing (asafetida)
20 okras, washed, pat-dried,
ends trimmed & cut to ¼” thick slices
½ teaspoon mithu (salt)
¼ teaspoon hardar (turmeric)
½ teaspoon marchu (cayenne pepper)
1 teaspoon dhaanaa jiru (powdered coriander & cumin seeds)

Heat oil with whole dried pepper, fenugreek seeds &
asafetida. Wait till the seeds start crackling.

Add okra, salt and turmeric. Mix well and lower heat.
Cook for 20 minutes.

Add cayenne pepper and coriander-cumin. Mix well and cook for 2 more minutes.

Serve with fresh rotli & plain yogurt.
